Ingredients:

- 8 oz (225 g) Monterey Jack cheese, shredded
- 8 oz (225 g) Oaxaca cheese, shredded (or a blend of mozzarella and cheddar)
- Vegetables:
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 small jalapeño, seeds removed and finely chopped (optional)
- 2 cloves garlic, minced
- 1 medium tomato, diced (optional)
- Seasoning:
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Sauté Vegetables: In a skillet, heat the olive oil over medium heat. Add the chopped onion and jalapeño. Sauté for about 3-4 minutes until they’re soft. Add the garlic and cook for another minute until fragrant. If using, stir in the diced tomato and cook until softened, about 2 minutes.
